The alpha-amylase inhibitor is identified in the protein fraction of the bean. This protein binds with the active sites of alpha-amylase and prevents the starch from metabolizing. Hence it is also called a “Starch Blocker”.

The enzyme alpha-amylase helps break down carbohydrates (starch). Excess carbohydrates in the diet are ultimately converted to fats and stored in the body. This helps inhibit this enzyme – alpha-amylase.

With a reduced amount of amylase available for breakdown, the complex carbohydrate has a better chance of traveling through the body without being assimilated. Then it is eventually excreted from the body instead of being converted into stored fat.

White kidney Beans grow best in slightly acidic to neutral soil with a pH between 6 and 7. Clay or silt loams are better for bean production than sandy soils.

Best time for the cultivation of  White  Kidney beans is February-March. As the summer season ends, kidney bean plants begin to lose vigor and die back.

The plants should be left in place until the leaves, stems and pods dry out completely and turn yellow. Once the leaves begin to drop, the beans are ready for harvest.
